There are two kinds of calls from restaurant owners. The first comes in at 11 p.m., after service: "We saw three of them on the prep counter, you need to come tomorrow." The second comes on a Tuesday morning, in a far tenser voice: "We had an inspection, we're rated 'needs improvement', and we've got fifteen days to prove we're taking action."
The second call is almost always the consequence of a first call that wasn't made early enough.
In a commercial kitchen, the German cockroach (Blattella germanica) is not merely a cosmetic or reputational problem. It is a recognised biological hazard under the European food hygiene legislation, and its presence directly engages the operator's liability. In other words: it isn't the insect that proves expensive, it's the empty file you hand the inspector when they ask to see your pest control plan.
This article explains what actually happens inside an infested kitchen, what an inspector looks at, and how to build a system that holds up — not just on the day of the visit.

Why a professional kitchen is the German cockroach's ideal habitat
A species that needs warmth — and finds it
The German cockroach is tropical in origin. It cannot survive outdoors in our latitudes: its population depends entirely on the artificial microclimates we provide. Its development optimum sits at around 30 to 33 °C, with high humidity.
And a commercial kitchen produces exactly that, permanently:
- the back and compressor of cold rooms and refrigerated cabinets, where heat dissipation creates a zone that is warm and dry at surface level and damp at floor level;
- fryer housings and the base units of cooking ranges, which stay hot for several hours after service;
- service ducts, pipe runs and crawl spaces between the kitchen and the wash-up area;
- the hood-type dishwasher and its room, saturated with water vapour;
- coffee machines, drinks dispensers and ice machines, which are often never pulled away from the wall.
At 30 °C, a female produces an ootheca containing roughly 30 to 40 eggs every three to four weeks, and the egg-to-adult cycle completes in six to eight weeks. A single gravid female introduced in a delivery box can therefore generate several hundred individuals in a single quarter. That speed is why "we saw two of them" in September becomes "they're everywhere" in November.
Entry route number one: the delivery
Contrary to a persistent belief, a dirty kitchen doesn't magically attract cockroaches: dirt allows them to stay and multiply, but it isn't what brings them in. In the cases we handle in the Île-de-France region, introduction happens in the overwhelming majority of instances via:
- corrugated cardboard delivery boxes (the fluting is a perfect shelter, warm and dark);
- plastic drinks crates and reused produce trays that circulate between several establishments;
- second-hand equipment — a refrigerated cabinet bought used is a classic vector;
- shared party walls: a building with several food businesses, common ducts and a shared bin room.
This is why the first concrete measure in a restaurant is not a treatment but an operating rule: cardboard never crosses the stockroom door. You unpack in the goods-in area, transfer to washable plastic containers, and remove the cardboard immediately. Many establishments equip themselves with stackable polypropylene gastronorm containers that permanently replace cardboard storage — a modest investment compared with the cost of an established infestation.
What an inspector really looks at
The framework: what the regulations say
Sanitary inspections in food service fall to the DDPP / DDETSPP (departmental directorates for the protection of populations), under the authority of the DGAL. Results are published on the public Alim'confiance platform, with four levels: "Very satisfactory", "Satisfactory", "Needs improvement", "To be corrected urgently".
The reference text is Regulation (EC) No 852/2004, Annex II. It notably requires that:
- premises be designed and maintained so as to prevent pests from entering and establishing themselves;
- adequate control procedures be implemented and documented;
- the operator apply an approach based on HACCP principles, which includes managing biological hazards.
In practice, the inspector isn't only looking for a cockroach: they're looking for proof that you know whether you have any, and what you do about it.
The blind spots inspected first
An experienced inspector never starts with the spotless prep counter. They start with what nobody ever moves:

The characteristic inspection gesture has been the same for twenty years: pulling an appliance away from the wall and looking behind it with a torch. That's where an establishment's real history is written. A powerful LED torch is, incidentally, basic kit for any manager who wants to audit their own kitchen before someone else does.
The documentary evidence required
The "food safety management plan" binder must contain a working pest section, not a photocopied sheet. In concrete terms, what's expected is:
- the monitoring station layout plan (traps, baits, secured bait stations), numbered and positioned;
- the contractor's visit reports, dated and signed, with catch counts recorded;
- the safety data sheets (SDS) and technical data sheets for the products used, with marketing authorisation numbers;
- the technician's Certibiocide certificate;
- the traceability of corrective actions: what was observed, what was done, and the result recorded at the following visit.
A well-kept file doesn't make cockroaches disappear, but it radically changes how the operator is judged: it documents control in progress rather than denial.

Detecting before you see: passive monitoring
The sticky trap, the most cost-effective tool in the kitchen
Seeing a cockroach during the day means the population is already dense — subordinate individuals are pushed out of harbourages and go looking elsewhere. In other words, visual observation is a late indicator.
Passive monitoring corrects that. It relies on pheromone sticky traps placed according to a simple logic:
- two to four traps per technical zone (wash-up, cooking line, stockroom, bar);
- always against a wall, in a corner, never in the middle of a surface — cockroaches move by thigmotaxis, in contact with surfaces;
- dated with a marker, checked once a week, counts recorded.
A set of pheromone sticky traps for cockroaches costs a few euros and provides information nothing else does: the trend. Three catches this week, one the next, zero the third → the treatment is working. The reverse → the strategy needs rethinking.
That weekly record, logged in a food safety monitoring logbook, is exactly the documentary evidence expected during an inspection.
Reading the signs before the insect
Four signs precede direct observation:
- clustered black-speck droppings, resembling ground pepper, on high edges and cupboard corners;
- brown oothecae, 6 to 9 mm long and ridged, often glued into the grooves of a seal or a rail;
- translucent, very fine moults under equipment;
- a characteristic odour, sweet and rancid, noticeable in advanced infestations, caused by aggregation secretions.
Treatment: why spray is the worst reflex
Aerosol insecticide scatters the infestation
This is the point we stress constantly with restaurant owners: spraying an over-the-counter aerosol onto a cockroach harbourage almost always makes the situation worse. The product kills a few visible adults, but its repellent effect blows the harbourage apart: surviving individuals and oothecae migrate to harder-to-reach areas, sometimes into the flat upstairs or the neighbouring business.
ANSES also regularly highlights the risks linked to inappropriate use of household insecticides, particularly in food environments, where cross-contamination of foodstuffs and food-contact surfaces is a genuine hazard. In a commercial kitchen, using a product not authorised for that type of premises is in itself grounds for non-compliance.
The method that works: gel bait within integrated pest management
The professional protocol relies on insecticide gel baits (active substances such as fipronil, indoxacarb or imidacloprid, depending on current authorisations), applied in micro-dots the size of a match head.
Their advantage is as much mechanical as chemical: the cockroach eats the bait, returns to its harbourage, and the effect spreads through the population via coprophagy and necrophagous cannibalism — juveniles consume the droppings and corpses of poisoned adults. This is known as the domino effect, and it's the only way to reach nymphs that never come out.
The typical protocol for a pest control job in food service:
- Diagnosis: torch inspection + trap readings, mapping of harbourages.
- Preparation: degreasing the treated areas (gel applied over grease won't be eaten).
- Application on day 0: micro-dots in areas inaccessible to food and staff.
- Check at day 14: trap readings, targeted re-application, rotation of the active substance if needed.
- Check at day 30 to 45: validation, transition to monitoring.
Rotating active substances is no minor detail: documented resistance exists in Blattella germanica, notably to certain pyrethroids, and repeated use of the same molecule selects for resistant populations. A serious contractor will tell you which active substance they used and why they're switching.

Sealing the building: exclusion measures that last
Chemical treatment brings the population down; it's the fabric of the building that stops it coming back. Three jobs, all doable during a weekly closing day:
Sealing and caulking
Every crack wider than 2 mm is a potential harbourage. Seal up:
- pipe and duct penetrations between the kitchen, wash-up area and bin room;
- loose tile/skirting board joints;
- openings behind sockets and electrical boxes;
- voids behind splashbacks and poorly jointed stainless steel panels.
A good-quality food-grade fungicidal sanitary sealant is enough for most damp joints; for larger openings, pack them with steel wool before filling — neither cockroaches nor rodents can get through it.
Water management
A German cockroach survives several weeks without food but rarely more than a week without water. Removing free water is therefore a more powerful lever than removing crumbs:
- wiping down surfaces and pot-wash sinks at the end of service;
- repairing drips under sinks and machines;
- checking floor gullies (water trap present but grille clean);
- drying the bin room after washing.
Storage and waste removal
- open foodstuffs systematically transferred into airtight food storage containers, labelled and dated;
- storage kept away from walls, on stainless steel shelving with castors to allow cleaning;
- lidded waste bins, taken out daily, never stored in the kitchen;
- complete elimination of cardboard storage in warm areas.
The September calendar: why now is the right moment
The return from the summer break is a strategic window in food service. Establishments reopen after the holidays, throughput picks up, deliveries resume in volume — and cockroach populations that thrived in a warm, closed kitchen during three weeks in August arrive at the end of their exponential growth cycle.
Our recommendation to operators in the Paris region comes down to four points:
Before 15 September: a full torch inspection, equipment pulled away from walls, with a set of dated sticky traps installed.
Week 2: check the traps, and trigger a gel treatment if even a single catch appears in the cooking or wash-up zone.
Week 4: follow-up visit, update of the food safety management plan, archiving of reports.
All year round: weekly trap checks logged in the register. That's three minutes a week, and it's what makes the difference during an unannounced inspection.
